Star anise has a presence that feels both striking and elegant — a perfect little star carved by nature, each point holding a glossy seed with a fragrance that rises the moment it’s touched. Its aroma is sweet, warm, and gently spicy, with a hint of liquorice that feels comforting and familiar. Star anise has some charming quirks. Its star shape isn’t just decorative — it’s the dried fruit of the tree, and each point is technically a pod. The flavour is strongest when the star is whole, which is why many cooks prefer to use it intact rather than ground. It’s also one of the key ingredients in Chinese five-spice powder, and in some cultures it’s added to mulled drinks during winter celebrations for its warming, festive aroma. 

People often enjoy star anise for the sense of comfort and gentle warmth it brings. Its sweet, aromatic notes can make a blend feel soothing and cosy, especially during colder months or quiet evening moments. It pairs beautifully with cinnamon, cardamom, ginger, black tea, rooibos, and citrus — adding depth and a soft, lingering sweetness that rounds out a blend.

Star anise is generally considered gentle, but it must be sourced carefully — true star anise (Illicium verum) is safe for culinary use, while Japanese star anise (Illicium anisatum) is toxic and should never be consumed.
